Celebrity chef Iain ‘Huey’ Hewitson revealed his secret ingredient for ensuring the perfect scrambled eggs every time – and he learned it from the late great Bill Granger.
Hewitson was a fixture on Australian TV for decades thanks to his popular afternoon cooking shows – and now he has made a surprise comeback on TikTok.
The chef shared that he always uses heavy cream in his egg batter and beats it with a fork rather than a whisk.
‘The best scrambled eggs I’ve ever had was at ‘bills’ cafe [which was owned by] Bill Granger who is sadly no longer with us. He was great chef… I saw his scrambled eggs recipe and it had about three tonnes of cream in it,’ he said in a video.
Melbourne-born cook Bill Granger was described as ‘the egg master of Sydney’ by the New York Times and has been credited with making scrambled eggs ‘sexy’.
His Darlinghurst café is celebrated for having ‘perfected’ scrambled eggs that were described by one food critic as ‘light as the breath of an angel’.
Hewitson said: ‘I think the recipe had as much cream as eggs, but I’m not going to do that. I like to put in a good slurp of cream into my eggs before beating them with a fork.’
The chef advised against using a whisk because you want to keep some air in it.

Next, Hewitson placed half a tablespoon of butter onto his pan and waited for it to melt before adding the eggs in.
‘We’re not making an omelette here, so every time it curdles you bring the mixture to the centre,’ he said.
‘The other thing is – don’t overcook them. People tend to overcook them until they’re really hard. They keep cooking once you take them off the heat source, so turn the heat off a little before you’re finished.’
Hewitson always adds a pinch of salt and a handful of chopped chives for colour and freshness.

Many younger Aussies have spoken of their joy at stumbling across Huey’s cooking videos online, saying they have ‘unlocked’ fond memories of watching him as kids.

His last new cooking episode was broadcast on free-to-air in 2014.
Since getting the proverbial tap on the shoulder from commercial TV bosses, the Melbourne-based Kiwi chef has kept a low profile.
The 75-year-old previously told FEMAIL he felt ‘humbled’ by the instant success, adding that his philosophy on TikTok is no different to when he was on TV: to inspire and teach others how to cook.
